Weeknights are sometimes a challenge to have a healthy dinner ready in time for my little man to get to bed on time. We don't get home till about 645 pm and that doesn't leave much time for making dinner let alone eating dinner and then bath and bed. So, I often make dished that are make ahead or crockpot. Then I just have to heat and or serve. This make ahead dish was a hit. Mac and cheese is such a yummy, warm comfort food. But because I am a stickler for making sure my family has lots of veggies with every meal, I made this with cauliflower. It was so good, I will defiantly make it again. I did of course make a separate pasta that is gluten free for myself. The dish was super easy and was filling and most importantly it was delicious and had lots of good nutrition. I just added a fresh salad and some tukey italian style sausage for a complete meal. I would post the recipe I used, but as usual, I read over several and then adjusted what I wanted according to what I had on hand. Aren't recipes just a general guideline for cooking times and temps anyway?

Does little man eat salad?

Nope. I can get him to eat raw cabbage salad and one leaf of spinach and one tiny bite of lettuce, then it is tears and gagging and such. Frustrating for sure. He liked this mac and cheese after some explanation that it was not infact mac and cheese but rather special pasta with crispy topping. The was a whole cauliflower in it. And I gave him carrots and tomatoes instead of salad. My sister had a little boy just a year younger and he loved any veggie you give him. I was not so lucky. Heh.
